...and by "grown-up," we mean, palate pleasing for not only mom and dad, but also for the "grown-up" one-and-a-half-year-old diners in our house.
Sweet potatoes (in puree form) were the first "real" foods my little guys ate, and they remain a favorite to this day. I love to serve them to the whole family since they are full of vitamins (A, C, folate to name a few) and minerals (potassium, calcium, iron) and are full of fiber. Nothing against the regular old white potato, but these kind of put them to shame in terms of nutritional value.
So, in order to keep this superfood a staple in our house (since the kiddos have moved past eating food the consistency of "mush"), we came up with a simple baked sweet potato casserole that works for all of us.

"Grown-Up" Sweet Potato Casserole
1/4 cup Olive Oil
1 tsp Cinnamon
1/2 tsp Nutmeg
Pre-heat oven to 350 degrees. Peel the potatoes and cut them into 1/2-inch cubes. Add to a large mixing bowl. Toss with olive oil, cinnamon, and nutmeg. Bake in a 9 X 9 casserole dish for 45-50 minutes or until fork tender.











This sounds wonderful. I wish I could convince my husband to each sweet potatoes. I love sweet potato fries.
